Baba Ganoush (from Fran in Yorkville)
1 medium eggplant
1/4 - 1/2 cup tahini (sasame seed paste)
1-2 cloves garlic
Dash of salt
Roast eggplant - slice in half lengthwise, salt, let stand for 15 minutes to get rid of bitter juices. Brush off & blot, them roast cutside down on baking sheet at 400 degrees for 30 minutes or until collapses. Let cool, then scoop flesh out of skin into a food processor, add tahini, garlic, dash of sale, then puree. Serve with Pita triangles.
Labne (from Fran in Yorkville)
2 cups plain yogurt
1 large cucumber
1 clove garlic
Salt
Parsley, mint or cilantro (optional)
Drain yogurt in a fine meshed sieve or coffee filter for 1 hour. Peel (and seed if needed) the cucumber. Place in a colander, salt and let stand for 30 minutes. Rinse and drain cucumber, then combine with yogurt, minced garlic and optional herbs. Goes well with grilled chicken.
Roasted Root Vegetables (from Karen at Natural Direct)
Here is a simple and delicious way to prepare root vegetables:
Peel and cut into bite-size pieces: any combination of parsnips, turnips, sweet potatoes, potatoes, rutabagas, and carrots to make 3 cups
Cut one medium onion and one large colored pepper into bite-size pieces
Spray a 2-qt baking dish and add the vegetables. Drizzle the vegetables with about 2 Tbsp of olive oil. Sprinkle with 1 tsp dried thyme and stir to mix. Or add fresh thyme after baking.
Bake in 375º oven for about 45 mins., or until soft when pierced with a fork. Enjoy!
